Blanquette de la Mer au Curry at FARM

Taking something many consider unappealing and turning it into something beautiful, Chef Daniel Orr knows just what to do — crafting a stew that makes even shark or monkfish sizzle with flavor.
Ingredients
3 lbs shark or monkfish
Seasoned flour as needed with salt, pepper, and a touch of sugar
1 onion
1 clove
1 or 2 carrots, peeled and cut into ¼ rounds
18 white pearl onions, peeled
½ lb. mushrooms
2T green curry paste
2 egg yolks
½ c. whipping cream
Juice of 1 lemon
Butter
Salt
Herbs: 2 sprigs thyme, 3 parsley, 1 rib celery, ½ bay leaf
6-7 c. white chicken stock, fish stock, or water
Chopped mint and toasted pine nuts as garnishes
Creamy Curried Shark Stew with Pearl Onions, Mushrooms, and Mint
Cut the fish into two inch-cubes. Stick the onion with the clove. Tie together the celery, thyme, Bay leaf and parsley in a bouquet garni. Melt 3 tablespoons of butter with oil and a heavy bottomed saucepan. Toss the cubed shark and the seasoned flour to coat. Add the shark to the pot and brown on all sides, then add the carrots, onion, herbs, Curry paste, and salt. Add water to cover the fish. Cook over high heat and bring to a boil. Reduce the heat, cover, and simmer for 45 minutes, skimming as needed. Peel the white Pearl onions. Clean the mushrooms and cut them into quarters. Add to the shark the last 15 minutes of cooking. Combine the egg yolks with the cream and half of the lemon juice in a bowl. Set aside until needed. Carefully remove the shark, mushrooms, and onions with a slotted spoon and place them in a warm serving dish. Cover and keep hot. Reduce the cooking liquid until slightly thickened. Pour the cream and egg yolk mixture into the cooking liquid. Cook over very low heat for 10 minutes. Do not let the sauce boil. Add the lemon juice, salt, and pepper to taste as needed. Strain through a fine chinois (fine strainer) over the fish. Sprinkle with chopped mint and toasted pinenuts.
