Chef Daniel Orr’s Take on Grilling Styles

Chef Daniel Orr wants you to think a little differently about how you grill on occasion. Rather than sticking to the same routine, he encourages experimenting with new techniques, unexpected ingredients, and global flavors to elevate your grilling game. Here are some of his favorite strategies to bring creativity and bold taste to your backyard barbecue.

Hoosier Summers

Field by field, Southern Indiana grows greener every summer. According to Daniel's grandfather, the old Hoosier proverb states that maize should be "knee high by the 4th of July." He always valued the possibility that a healthy corn crop could lead to "greener pastures."

Cut-Offs in Cooking

All the prestige and prestige of being a professional chef appear to melt away in hot weather. Indeed, when the temperature rises, Daniel's culinary "genes" appear to change into cut-offs. At mealtime, grilled steak, tomato salad, and a tall drink of anything cold are all he can think about. We can connect with our basic caveman roots and our childhoods via grilling. The connection between fire and food is basic. “At my restaurant I often like to show off a bit,” says Daniel, “but summertime family gatherings are more about nostalgia and fun than kitchen wizardry.” Try something a little different instead of simply grilling the typical Oscar Meyers box. A massive chunk of grass-fed beef from the area? A few sausages? What about some locally produced vegetables or perhaps the tofu you just tasted? Get local ingredients, cook them simply, and enjoy a delicious summer dinner outside!

Take Your Grilling to the Next Level

To make your BBQ a little more elegant, place fingerbowls on the table. Water dishes with slices of lemon or lime floating in them are called fingerbowls. Before they enter your home, guests can dip their fingers in and squeeze the citrus to get the fat and sauce from them! Pour some orange blossom or rose water into the bowls to add a little aromatherapy.

Important Grilling Tools

Excellent quality long handled spring-loaded tongs.

Large wide spatulas for fish and other items that tend to flake

Hot pad or dish towels

Long handled pastry brush for sauces and marinades

Bamboo skewers soaked so they do not burn

A good wire grill brush

Plenty of zip lock bags to use in place of bowls for marinating (saves on clean up time) and for storage of leftovers.
