Kolb Homestead Cranberries and Persimmon Pudding

KOLB HOMESTEAD CRANBERRIES
Ingredients
4 pounds fresh cranberries
2 cups local maple syrup
1 red onion, finely diced
2 oranges, zested and juiced (zest cut in medium strips)
1 cup black raisins
1 cup dried cranberries
1 jar (2 ounces) diced candied ginger
2 cinnamon sticks, broken in half
1 fresh bay leaf
½ teaspoon freshly grated nutmeg
¼ teaspoon ground clove
½ teaspoon freshly ground black pepper
1 teaspoon salt
Wash cranberries and set aside one pound to use later. Heat syrup in a large, heavy-bottomed pot until boiling wildly and reduce by half. Add the onion and the remaining 3 pounds of cranberries and return to a boil. Add remaining ingredients and reduce heat to a simmer. Cook, stirring, until thick. Add reserved cranberries and remove from heat. Stir well and cool to room temperature. Season to taste with additional syrup, salt, and pepper, if needed. Chill. Serve at room temperature. Cook’s note: This is great with turkey, pork or tofu and is a nice accompaniment to semi-firm cheeses.
PERSIMMON PUDDING
Ingredients
1/3 cup melted butter
2 cups persimmon pulp
2 cups sugar
2 eggs, beaten
1 cup half and half
1 cup buttermilk
1 3/4 cups all-purpose flour, sifted
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons lemon zest
Preheat oven to 325 degrees. Brush a 9-by-13-inch baking pan with some of the melted butter, reserving remaining butter. Beat the pulp, sugar, eggs, half-and-half, and buttermilk together. In a large bowl. mix the flour, baking powder, baking soda, salt, pepper, and lemon zest. Fold the dry ingredients and wet together while drizzling in the melted butter. Place in prepared pan and bake for 20 minutes; stir once. Continue to cook for another 40 to 50 minutes or until a toothpick inserted in center comes out clean. Serve warm or at room temperature with unsweetened whipped cream or vanilla ice cream.
