Special Salads at FARM

Chef Daniel Orr has a couple of creative Caribbean salads. Here is the breakdown and prep of each.
Breadfruit Salad
One of the most beloved ingredients in the Caribbean is used in this cuisine. Most people know the breadfruit as the cargo that Captain Bligh was transporting when he had that little altercation with the boys on the boat. You will also fall in love with it if you can locate it. If not, use any roasted or boiled root vegetable in this dish. It works well with carrots, potatoes, and parsnips.
Ingredients
1 small breadfruit
2oz olive oil
2 carrots, cut into ½ dice
1 papaya, peeled and diced
1 red onion, diced
1tsp ginger, minced
1c yogurt
¼ c mixed herbs (parsley, cilantro, and basil), roughly chopped
Salt and pepper to taste
Radicchio leaves (optional)
In the large bowl, rub the breadfruit with olive oil. Place the breadfruit on a cookie sheet and bake in a preheated oven at 400° for 30-45 minutes or until tender when pierced with a knife. Allow it to cool to room temperature. Remove the skin and center core of the breadfruit and cut into large half inch dice. Toss with remaining ingredients and season to taste.
Good Vibration Chicken Salads
Tyrone, a dreadlocked speedster, is the chef who developed this cuisine. When he is not working, he can be seen practicing maneuvers on one of the local competitive sailing ships or driving his hot rod on the ANGUILLIAN roads. This is a simple and quick salad to create that will get you out of the kitchen and back in the race because the guy loves fast food.
Ingredients
1 ½ lb chicken breast, grilled or poached and cut in to small pieces
1ea. Red, yellow, and green pepper, diced
3 ripe tomatoes, diced
2 ribs celery, diced
1 small red onion, diced
½ pineapple, peeled, cored, and diced
1 bunch mint, washed, stems removed, and roughly chopped
3-4 scallions, chopped
½ c. Curry Vinaigrette
Salt and pepper to taste
Fresh chilies to taste (optional)
Combine all and season to taste.
