Sweet Seasons and Orange Cookie Spoons

Getting creative with sweets is something Chef Daniel Orr is great at!

Here’s a recipe where he takes cookie dough and transforms it into dessert spoons!!! “I like to take these “spoons” and top them with a little cranberry compote, a dollop of pumpkin mousse and whipped cream, lemon mousse and a berry or just some fruit jam they are also nice to serve along with a pot of Chocolate mousse as a garnish.” Orr continues “The Midwest is in the sweet spot of the United States. There are so many great things growing around us that we share with the rest of the country. The family farm is still alive here, and if we believe what the big city magazines you're saying, it's getting sexier all the time. We tend to like balance and flavor of our savory cooking with sweet and sour flavors. We also like our sweets sweet.”

Ingredients

2 1/2 cups all-purpose flour

1 1/2 T grated orange zest

1 1/2 teaspoon sweet seasoned spice blend

one teaspoon salt

two sticks unsalted butter, softened

3/4 cups sugar

one large egg yolk

2T's heavy cream

equipment: small spoon for template of cookie

Whisk together flour, zest, Sweet Seasoned Spice Blend, and salt. Beat butter and sugar with an electric mixer until pale and fluffy, then beat in yoke and cream. At low speed, mix in flour mixture in three batches just until a dough forms. Quarter dough and form each piece into 6 inch disc, then chill, wrapped separately in plastic wrap, until firm, two to three hours. Preheat oven to 350° with rack and middle. Roll out one piece of dough between sheets of parchment paper into an 11 inch round (1/8 inch thick). Slide dough in parchment onto a tray and chill until firm, about 15 minutes. Cut out as many cookie spoons as possible (chill dough again if necessary), reserving and chilling scraps. Transfer cookies to a parchment lined large baking sheet, arranging them one inch apart. Bake until edges are golden brown, 9 to 12 minutes. Cool on baking sheet 5 minutes, then slide cookies, still on parchment, on to a rack to cool completely. Make more cookies with remaining dough and scraps (reroll only once) uncooled freshly lined baking sheets.
