Vegan GF Stuffing for Thanksgiving Vegetables & FARM Banana Butternut Bisque

STUFFING

Ingredients

12 loaves GF Bread - cubed

7.5 C before reconstituted TVP- Textured Vegetable Protein

1 #10 can Pumpkin Puree

8 lb. Tofu- cubed small

5 c. Diced Dried Apricots

5 C. Currants or Raisins (golden)

7.5 C. Chopped Pecans

10 C. Celery (chopped)

10 C. Carrots (chopped)

8 lb. Chopped Mushrooms

7.5 C. Sweet Onion (diced)

2.5 C. Fresh Parsley (chopped) 

5 C. Rosemary (chopped small) 

2.5 C. Thyme (NO stems/sprigs)

1 C. Garlic Powder 

5 C. Sage (leaves chopped VERY small) 

¾ C. Black Pepper

1 – 1.5 C. Salt

2 Gal. Water (to reconstitute TVP) + .5 Gal. to entire mixture

2 C. oil

Salt and Seasonings to taste

Thyme, Sage, Rosemary, carrots, onions, garlic powder, salt, pepper, and mushrooms in a pan with oil. Cook until onions are transparent – approx. 10 mins. Remove from heat and pour into largest bowl in house. Add last of the water and pumpkin puree and mix thoroughly. TVP, tofu, GF bread, pecans, apricots, and raisins (mixed well prior to assembling) added and mixed in. Parsley mixed in well. Transfer mixture into hotel pans. Cover tightly with aluminum foil and cook 20- 30 minutes at 350f. Should be firm and hold together well when portioned for stuffed vegetables.

BISQUE

Ingredients

4 bananas peeled

3 onions chopped

2 carrots chopped

5 shallots chopped

5 Clove garlic peeled and chopped

1 T. Ginger chopped

1 Bulb fennel Chopped

Sweat the above ingredients with 2 oz. olive oil

When onions are translucent and tender

Add

5 pounds peeled and cubed butternut squash

(Squash and Pumpkin are interchangeable)

2 pounds pumpkin (if available)

4 green apples cored

1 hot chili or 1 T hot mango sauce

Cover with vegetable stock and bring to simmer. Cook until squash and pumpkin are tender. Puree and strain through fine mesh chinois. Finish with coconut milk, lime, salt, and pepper to taste
